Recipe: Chicken Salad
It had been a lovely sunny day and neither R or I wanted anything too heavy to eat at the end of a long day.
So I decided to throw together a quick salad out of what we had in the fridge.
And it was absolutely delicious, so I thought I would share it with you guys.
Chicken Salad
Recipe for two
Ingredients
2 x Chicken Breasts
6 x Rashers of Bacon (Chopped into smaller pieces)
8 x new potatoes halved (I just chopped up larger potatoes, either way is fine)
1/2 a Cucumber (chopped into discs and quartered)
2 x Celery Stalks (chopped in half and sliced into smaller pieces)
6 x Cos Lettuce Leaves (washed and roughly chopped)
Pinch of Salt and Pepper
Dressing
4 tbsps of Extra Virgin Olive Oil
2 tbsps Fresh Lemon Juice (pre-squeezed is ok to use but fresh does taste better)
Pinch of salt and Pepper
Method
1. Preheat the oven to 180 C / 350 F
2. Season Chicken with Salt and Pepper and wrap in foil packets. Place on a baking tray. Cook for 20-25 minutes or until fully cooked.
3. Meanwhile boil the potatoes until cooked. When cooked drain and leave them to cool.
4. Fry Bacon and leave to cool.
5. After 15 minutes uncover chicken and continue to cook.
6. Assemble all cold ingredients in serving dish adding the potatoes (chopped smaller if desired)
7. Prepare the Dressing by whisking the oil and lemon together, season to taste (add more/less lemon or oil to suit your own tastes).
8. Once Cooked slice and place the chicken over the bed of salad. Sprinkling the bacon around it.
9. Lastly drizzle the dressing over the chicken and salad.
10. Enjoy

Food Product Review: Lazy Day Foods Millionaire's Shortbread
I spotted these at my local store a week ago and couldn't resist a taste.
This company makes products that are gluten,wheat,dairy,egg and hydrogenated fats free and that are suitable for Vegans and Coeliacs.
Now I know what you're thinking.....Is it even possible for something to taste good when seemingly all the best bits have been removed?
The answer is Yes....These were absolutely gorgeous.
My brother who loves all things sweet tried them although he was very apprehensive at first,
He gave them the thumbs up and I'm sure he would have demolished the whole packet had I have let him.
I was really impressed with the shortbread itself , it managed to hold together very well
In comparison to the usual dairy free and egg free biscuits which crumble very easily.
These are another product that I will most definitely be keeping all to myself.

Pic Of The Day: Perfect Breakfast
I wanted to share this picture of a simple but beautiful breakfast I made at the weekend
Croissants with Hazelnut Coffee!!
So glad to have the daffodils in bloom I make sure to have at least two vases full in the house at all times.
They are such a beautiful sign that Spring has arrived.

Food Product Review: Doves Farm Stem Ginger Cookies
Doves Farm Gluten Free Stem Ginger Cookies
In most cases unfortunately yummy treats = dairy and eggs.
Since having a dairy free and egg free diet I have become determined to find sweet treats that taste good.
These are my most recent find, which are absolutely gorgeous,
Although they only advertise them as being Gluten Free I was ecstatic to see that they contain no eggs or dairy.
They are remarkably similar to any other normal ginger biscuits that are on the market,
The only slight difference I found was that the cookies tended to be a little drier than usual.
Personally this made no difference to me and I'll definitely be getting them again
I managed to pick them up from my local store but they also sell them on their website.

Store Cupboard Recipe: Quinoa with Bacon and Peas
We had very little food left in the house due to it being the end of the week so we decided to create something out of the left overs from the previous meals we'd had during the week.
And we came up with this delicious and healthy recipe.
Quinoa with Bacon and Peas in Lettuce Cups
Recipe for 2 People
Ingredients
1 cup of Quinoa
1 3/4 cups of Stock (I use Marigold Bouillon Standard as it is Yeast Free)
1/2 cup of Garden Peas (we used frozen)
6 rashers of bacon (chopped into small strips) (Bacon can be substituted for any leftover meat)
2 Echalion Shallots (any shallot or onion is fine)
4 large Cos lettuce leaves (washed)
1 Clove of Garlic
Instructions
1. Rinse the Quinoa thoroughly.
2. Bring the Quinoa and the Stock to the boil and leave to simmer for around 15 minutes until all the stock has disappeared and add more water if not cooked thoroughly. (When using just water to cook Quinoa add a pinch of salt, if using this particular stock don't add salt the stock already provides that)
3. Meanwhile chop and fry the shallots in Olive oil to soften
4. Add the garlic and the bacon (use extra olive oil if necessary)
5. Whilst cooking rinse and chop the ends of the lettuce off and display on the plate
6. Add the peas to the onion, garlic and bacon mixture, stir continuously.
7. When all are cooked add the onion, garlic, peas and bacon mixture to the Quinoa
8. Combine and serve in the lettuce leaves
Voila!
A perfect healthy and easy meal.
